Apple Season, But Make It Cozy

A simple 3-ingredient recipe that’s equal parts cozy and gut-loving.

If you’ve been around here for a while, you know I love a cozy, simple, seasonal recipe. And right now? I’m in my stewed-apple era.

Apples are in full season here in BC — crisp, sweet, grounding, and so abundant you can find them at every local market. But there’s something extra special that happens when you cook them down: they turn into this soft, caramelized, deeply comforting food that just feels like a warm hug for your nervous system.

It’s also one of those back-to-basics recipes that reminds you how good simple can be. No sugar, no fuss, just a few ingredients that work beautifully together.

How to Make Them

All you need:

  • 1–2 fresh apples (Honeycrisp, Ambrosia, or Gala are my go-tos)

  • 1 tsp coconut oil or butter

  • A pinch of sea salt

Chop your apples into small pieces (I personally like to leave the peel on but optional). Warm the coconut oil in a pan over medium heat, then add the apples and a pinch of salt. Let them cook down slowly — stirring every few minutes — until they’re soft, golden, and slightly jammy.

That’s it. Seriously.

Why Your Gut Loves Them

Cooked apples are one of the most soothing, gentle foods for your digestive system. When the apples soften, the natural fibers (especially pectin) become easier to absorb and act as prebiotics — food for your beneficial gut bacteria.

Pectin helps:

  • Nourish your microbiome (those healthy gut bugs we want thriving)

  • Support regular bowel movements by gently binding toxins

  • Balance blood sugar and reduce post-meal crashes

  • Calm inflammation in the gut lining

And because they’re warm and lightly salted, they’re easier on the digestive tract — a grounding comfort food that supports not only the gut-brain axis but also fuels you!

How I Love to Eat Them

Spoon them over warm chia oats, Greek yogurt, or oatmeal. They’re also perfect beside pancakes or mixed into a bowl of overnight oats straight from the fridge.
